Recipes to Try

I often bookmark recipes I want to try... and then somehow end up forgetting about them.  I'd like to stop doing that! ;-)

So I'm going to try tracking them here, and hopefully this will help me to make a few new recipes, and actually find some new personal favorites.

First up - Spinach, Ricotta & Feta Stuffed Chicken Breasts  (Author says 2.5 points each - makes 9)
Ingredients -
With asparagus & baby potatoes

  • Frozen chopped spinach (10oz)
  • Oil
  • Fat free feta 
  • Fat free ricotta
  • Parsley
  • Scallions
  • Onion
  • Garlic
  • Chicken breast (1.25lbs)
  • Egg
  • Water
  • Seasoned breadcrumbs

Notes -
I'd want to explore ways to shave off a point, if possible, by using something other than an egg, and maybe Fiber One instead of the breadcrumbs

Review -
I made these... sort of.  Ended up making a completely bastardized version of the Cordon Blue recipe found in the Hungry Girl 1-2-3 cookbook, and using the guidelines from this recipe to create breading.  The combination was amazing... I still want to make this the original way though!


Next up - Spinach & Ricotta Spinach Rolls (Author says 4 points each - makes 9 mini-lasagnas)

Ingredients -
  • Lasagna noodles
  • Frozen chopped spinach
  • Fat free ricotta cheese 
  • Grated Parmesan cheese
  • Egg
  • Tomato Sauce
  • Part skim mozzarella cheese



Notes - 
I'd like to try these with wheat noodles instead of regular
